November 2013 - Vegan Thanksgiving

Welcome Friends,
We hope you are staying warm. We had a fabulous Vegan Canadian Thanksgiving Dinner last month.
Folks are always asking what we eat, so this month I am sharing what our celebration feast looked like. For our American friends, you may want to try these out for your Thanksgiving celebration this month. Also some great ideas for the upcoming Christmas/Holiday season.

Vegan Thanksgiving  

We hear this all the time, "What do you guys eat? The grandchildren had thirds, of this dessert!!! In a large mixing bowl:

Gramma's Inspired Apple, Cranberry, Apricot Crisp

apple crisp * cut up 12 (washed,cored and chopped) apple

 * 2 cans of Cranberries

 * 2 cups of thawed, frozen Apricots

 * 1 teaspoon Suede Hills Green Stevia Powder

 * 1 teaspoon vanilla extract

 * zest of one washed lemon

 * juice of 1/2 the lemon

 * 1 1/2 teaspoons ground cinnamon or to taste

 * 1 teasoon ground nutmeg

 * 1/2 teaspoon ground cloves

Mix the ingredients thoroughly. Pour into a 9 x 13 pan, lightly sprayed with Olive Oil. Then make the topping.


 In a bowl mix together:

 * 3 cups oats

 * 1 cup Brown Rice Flour

 * 1/2 cup Buckwheat ground into flour (use a coffee grinder)

 * 3/4 teaspoon Pink Himalayan Salt

 * 1/2 teaspoon  ground cinnamon

 * 4-6 Tablespoons Olive Oil

Stir well. Sprinkle over the fruit mixture in the pan. Next drizzle Pure Maple Syrup in a criss cross fashion over the top.

BAKE for 1 hour at 350 degrees F.

** Use a piece of foil or a tray under your pan to catch any of the bubbling over fruit juices. It just makes clean up so much easier! ENJOY!!!! We sure did!

The main meal consisted of:

Mashed Potatoes from our garden; we use some of the water the potatoes were cooked in, and a bit of Himalayan Salt, and that is it! They are very creamy.

Roasted Veggies  In a large bowl toss together 2 cups of each: 1 inch cubes of your favorite Squash, Yam, Beets, and Parsnips. I added 2 large onions cut in large chunks. Next I added several whole cloves of our Garlic. ( I should have added more, they were popular!) I drizzled 6 Tablespoons of Olive Oil over the veggies and sprinkled them with 2-3 teaspoons dried ground Thyme. Spread the veggies out on 2 cookie sheets lined with tin foil that have been lightly sprayed with Olive Oil. Make sure the veggies are in a single layer so they cook evenly. Bake at 400 degrees F for 35-45 minutes. Stir once during cooking.

Steamed Brussel Sprouts (for Phil)

Steamed Peas (I love the bright green contrast)

Vegan Stuffing:

(Though we generally do not eat gluten, we used Sprouted Grain Bread for this recipe.)

* Sautee 2 large onions in Olive Oil in a frying pan until transparent. Set aside.

In a large bowl:

* Tear 2 loaves of the bread into small chunks

Pour the onion mixture over the bread pieces and stir. Next mix in:

* 3 generous tablespoons of dried ground sage

* 1 teaspoon of Himalayan Salt (or to your taste)

* ground black pepper to your liking.

Stir together.

* Add Almond milk to moisten, 1/4 cup at a time. The mixture should be moist but not wet.

Bake in the oven in a covered, lightly oiled pan for 30-40 minutes or until heated through.

***Great thing with vegan food is that you do not have to concern yourself with under cooking, because everything could be eaten raw anyway!

What Goes In ...Must Come Out!

Well it is time to share a bit more valuable health  information with you. We trust that your lives and bodies are getting better and better as each day unfolds. Life just keeps getting better and better when we set our sails in that direction! Keep up the good work!

In & Out

I thought I would take this opportunity to share a few tidbits of info that can make a huge impact on your overall health. We have had so many calls and emails  from folks, who are doing their very best to live a healthy life. They are confused as to why they haven't reaped the results they were seeking from their entire health regime.

There are 3 main points that are so simple and easy that they often get overlooked. For some reason we expect it to be the big things in life to deliver the big results, but the truth be known, it is ALWAYS the little things that make the biggest difference in the outcome of our lives. Your health is no different!

Point One: What is your body pH?

This is so important because it is the precursor to tell you the state of our body's cells. If the cells are not alkaline, you are dealing with acidosis, and that my friend can be fatal if left unchecked! Sickness and disease can NOT live in an alkaline environment.

That is why we always tell folks....


Point Two: How often do you "Go # two?" 

Not many folks want to talk about how often they have a bowel movement, but this is a major concern for the health of your body. What goes in MUST come out! Recycling the toxins created from putrifying food is a major health issue.
Basically, if we eat three times per day we should have three BM's per day. Let me tell you from personal experience, even once per day is a Godsend! Always being constipated explains why I was the sick kid in the family, but not anymore!
The goal here for all of us is not for perfection, there are far too many situations and circumstances against us  in this day and age. But you should be having at least ONE BM per day, and if you are not, everything else you are doing for your health is a waste of time and money!!
Fibre plays a role, but if your body is lacking real minerals you are only playing with half a deck. Suede Hills Alfalfa is loaded with both fibre and minerals, plus a whole host of other essential nutrients. The Alfalfa alone changd my life, but the pH Happy Caps  mineral blend is the extra "Boot in the bum", pun intended! Do yourself a huge favor and make sure that, what goes in, definitely comes out, and in a timely fashion too!

Point Three: The Human Body is 55-75% water, are you drinking enough water? 

I know you have heard this before; drink at least 8 glasses of water per day. Let me give you a few reasons why.

  • First, if you do not have enough water going into your body it will have a very difficult time eliminating toxins, either through the urine or the bowels.  Toxins need a way out. Water is a necessary, it is inexpensive, readily available, and an easy remedy.
  • Second, if you get cramps in your legs, especially at night, you can resolve that with water and minerals (Suede Hills Alfalfa and/or pH Happy Caps do the trick for me).
  • Third, if you get headaches during the day for no apparent reason, drink a couple glasses of water, and take a few deep breaths of fresh air. This will make a huge difference. Absence of BM's play a contributing factor in headaches as well. Get the bowels moving, the toxins out and headaches go away. Again, I have lived through this one too!

Back to point two for a moment, a headache is another way your body alerts you to the fact that constipation has set in. So get the water and the minerals into you and you solve another issue that plagues millions of people.

No need for drugs that destroy your kidneys and liver!!! Your body just wants and needs these simple tools! Most people would solve the majority of their health issues by just looking after all three of these basic areas of common neglect.
