Oat Wonder Loaf


This revised recipe is sugar-free, fat-free, dairy-free, egg-free, wheat-free, nut-free, caffeine-free GUILT-FREE!! Plus it is super easy to make!!

In a large bowl, mix together and let soak 20 minutes:

  • 1 cup rolled Oats
  • 1 cup Raisins or mixed dried fruit of your choice
  • 1 1/2 teaspoons Suede Hills Green Leaf Stevia
  • 1 teaspoon Vanilla
  • 1 3/4 cups hot Water
  • 1/2 cup fresh chopped Pineapple and juice
  • 1/2 cup unsweetened Applesauce

I usually set a plate on top to keep the heat in the bowl.

In a small bowl place:

  • 3 Tablespoons of ground Flax seed
  • 9 Tablespoons of Water

Stir together and let stand.

After the previous ingredients have soaked for 20 minutes, add this flax mixture and stir in.

In a separate medium sized bowl, mix your dry ingredients together:

  • 1 cup ground Oat flour
  • 1 cup ground Buckwheat flour (not a wheat)
  • 1/2 cup Tapioca flour
  • 1 teaspoon Baking Soda (non-aluminum)
  • 1 teaspoon Baking Powder (non-aluminum)
  • 1/2 teaspoon Himalayan Pink Salt
  • 1/2 teaspoon ground Nutmeg
  • 1 1/2 teaspoon ground Cinnamon
  • 1/2 to 1 cup Carob Chips (similar to chocolate chips but without the caffeine)

Stir  thoroughly. Next add the dry ingredients to the wet and combine well. Pour into 2 greased or non-stick loaf pans. Bake 40-50 minutes at 375 F degrees.

These Oat Wonder Loaves are awesome right out of the oven, the bonus is they freeze well too!


NOTE: If you are going to freeze any, make sure to wait until the loaf has cooled, then slice it up before you bag it and put in the freezer. I usually only put half a loaf in each bag, otherwise, if I thaw a whole loaf….. we will eat a whole loaf!
